Shui Xian (“Water Fairy”) is very similar in character to Da Hong Pao, China’s most sought-after and expensive tea, but has developed a distinct character all its own.  Shui Xians often have a brooding depth, and heavy processing can make them the darkest possible examples of Rock Oolongs (though not the most masculine).
