Oolong teas represent a huge range of flavors, mouthfeels, and effects. Leaves are rolled and bruised to burst veins and encourage oxidation. And then they are roasted to stop oxidation and dehydrate the leaves. If the leaves reach full oxidation, it becomes a black tea, and can no longer be called oolong.
