Dong Ding is a Taiwanese oolong that was elaborated and developed from Anxi's Tie Guan Yin processing. The first Dong Ding bushes were planted in Lugu in the 1850's, and continue to thrive to this day. The teas are more thoroughly oxidized than Taiwanese high mountain oolongs like Jade Mountain, and they are more heavily roasted. The resulting tea has more notes of toasted wheat and caramelized sugars. It's a tea with lots of patience, and it offers many brews. Our Dong Ding is a blend of two producers, one in Lugu, the classic home of Dong Ding, and another in Mingjian. We believe that this blend honors the origins of Dong Ding while maximizing the possible nuance and refinement of the sip.
