Duck Shit Oolong has very quickly become the US's most famous Phoenix Mountain Oolong. It was developed by a paranoid farmer. He didn't want anyone to rob his new cultivar, so he started spreading a rumor that this tea had only been fertilized by the poop of duck birds. No one wanted to touch the bushes after that! So he spent the next decade working on this beautiful tea.

Phoenix Mountain, like Wuyi Mountain, is one of the first places to oxidize tea leaves. But they oxidized and roasted their leaves much less than in neighboring Wuyi. So, Phoenix mountain oolongs tend to be extremely expressive in fruity and floral flavors and aromatics. 

Phoenix Mountain oolongs perform best when brewed in a gaiwan. They make for great practice. Put lots of leaves in your gaiwan. Fill it to about 1/3 with dry leaves, and then practice quick brews. You can time your brews by counting your breaths. You'll be amazed at how flavorful these teas can be with just a quick brew.
